  1. Make ready 2 cups rice
  2. Get 1 onion large sliced
  3. Take 1/4 tsp garam masala

Steps to make Ghee Rice:
  1. I begin by getting the garnish bits ready.
  2. Take a large non-stick pot and melt 3 tbsps of ghee on medium low heat. Add the cashews and saute until their golden brown. Next add the raisins and saute for couple of seconds. Remove the cashews and raisins and set aside.
  3. In the same pot, add the sliced onions and saute until its caramelized. I had the heat on medium low and ten mins later it was done. Remove the onions out and set aside
  4. Time to make the rice. Boil some water in the kettle. Wash the rice really well and drain. Add a tbsp of ghee in the pot and add the cinnamon, cardamom, cloves and the bay leaf. Allow it to splutter for a couple of seconds.
  5. Add the washed (And drained) rice to the pot and saute over medium heat for about 5mins. Gently mix it as you don't want the rice to break! Add 4 cups of boiled water, the garam masala and salt.
  6. Cover the pot and let the rice cook on low heat. Once its cooked through, transfer to the serving bowl and garnish it with the caramelized onions, cashews, raisins and freshly chopped coriander
  7. Your delicious rice dish is ready!
